Cascavilla Organic Extra Virgin Olive Oil is premium quality oil, obtained directly from the olives of the Cascavilla Farm’s organic olive groves and extracted solely by mechanical means. The entire production process follows the principles of a short, transparent and sustainable supply chain and each stage of processing organic olives takes place at a controlled temperature to safeguard the nutrients and polyphenols recommended for a healthy, balanced diet.
The production of oil begins with defoliation and deramification and then proceeds to washing and pressing, when the olives are then pressed with millstones. The olive paste is pressed and reaches a maximum temperature of 26 degrees, after which it passes through the extractor from which the oil – now separated from the water – is obtained in its purest form. Stored in steel tanks under nitrogen, Cascavilla extra virgin olive oil is ready to be packaged and, within a very short period of time, enjoyed.
