Precision agriculture also permits the company to determine the exact day upon which to begin the harvest of each varietal, not a minute too late or too soon for optimal ripeness. These strictly limited first-day oils are of the highest quality. They are ready with perfect ripeness on the first day of the harvest, they are processed immediately and therefore have a very special freshness and fruit. The labels are designed each year by another artist.

100% Picual– this extra virgin olive oil is intense and has complex flavors that reminds us of green almond, green grass, banana peel, artichoke, tomato plant, vine stems, and green apple. Bitter and spicy more prominent but well integrated and very balanced.
This year marks the 16th limited edition of Castillo de Canena, First Day of Harvest. This year Matias Prat, Spanish Radio and TV commentator created a new label on which he wanted to embody the idea that hard work and sacrifice lead to success.
