Black Matured Olives | PDO Provence Olive Oil
“Noir d’Olives” is made according to a traditional Provençal recipe: controlled fermentation of olives (in the absence of oxygen, preventing the acidity level from rising) results in a smooth oil with a taste close to that of black olives. Its “rested” nose is very characteristic, with powerful aromas of cocoa, mushroom, and truffle.
In the kitchen: drizzle before serving on ratatouille, mushrooms, aged goat cheese, or plancha-cooked prawns, and for dessert in your quince and pear compotes, and on baked apples…
The Black Matured Olives from Château de Panisse won the gold medal at the national competition for Olive Oils in PDO Provence in 2020, the gold medal at the General Agricultural Competition in Paris in 2014 and 2018, the gold medal at the competition for oils in AOC PDO in Nyons, and three Epicure d’Or awards from the Fine Grocery competition.
