Ingredients

1 tablespoon San Carlos Gourmet Balsamic Vinegar

1 tablespoon fresh ginger, grated

1 teaspoon fresh thyme leaves

4 tablespoons Pago Baldíos San Carlos Extra Virgin Olive Oil

Salt and freshly ground black pepper

2 medium red onions, cut into chunks

4 salmon fillets
Instructions
1. Preheat your grill
Heat the grill to medium-high heat.
2. Make the balsamic mixture
In a small bowl, whisk together the balsamic vinegar, grated ginger, thyme, 3 tablespoons of olive oil, ¼ teaspoon salt, and ¼ teaspoon pepper. Set aside.
3. Season the onions
In a large bowl, toss the red onion chunks with 1 tablespoon of olive oil, ½ teaspoon salt, and ¼ teaspoon pepper.
4. Season the salmon
Sprinkle the salmon fillets with ½ teaspoon salt and ¼ teaspoon pepper.
5. Grill the salmon and onions
Place the salmon and onions on the grill. Cook for 5–6 minutes per side, until the salmon is opaque and the onions are nicely charred.
6. Grill additional vegetables (optional)
If you’re grilling any additional vegetables, place them on the grill after flipping the salmon. Cook for 3–4 minutes per side, until tender.
7. Serve and drizzle
Drizzle the salmon with the reserved balsamic mixture and serve hot with your favorite side dish — like roasted vegetables, salad, or rice.
