Our New Organic Hojiblanca EVOO
A green, expressive, single-estate extra virgin olive oil — harvested by hand at altitude, made with care, and limited to 2,000 bottles.
“At Terraverde, we believe every olive oil tells a story. Some years, it leaves a mark.”
That conviction is the origin of 555 Ecológico — Terraverde’s newest organic extra virgin olive oil, and one of the most distinctive releases in our 555 range to date.
It is a green Hojiblanca EVOO that captures the precise character of a single estate, a specific moment in the harvest calendar, and the increasingly celebrated olive oil landscape of Málaga, Spain.
The estate sits at exceptional altitude — high enough that harvest arrives only as November comes into view.
This year, picking took place in late October, when the fruit was still vibrantly green and at peak aromatic intensity. Slower to mature, higher in altitude, and slower to give up its fruit: everything about this finca works on its own rhythm.
That patience is reflected in every drop of oil.
Organic Farming, From the Ground Up
555 Ecológico is produced under certified organic principles. On this estate, respect for the soil, the olive tree, and the natural cycles of the land is not a marketing statement — it is the foundation of every decision made throughout the growing season.
No synthetic inputs. No shortcuts. Just a thoughtful, attentive approach to working with nature rather than against it.
The result is an oil that is alive, expressive, and deeply rooted in its place of origin. It speaks of the field from the very first instant.
Tasting Notes
Part of the 555 Range — with a New Identity
555 Ecológico joins Terraverde’s established 555 line — a range defined by exacting standards and a commitment to quality.
This release maintains all of that rigour while adding something distinct: a clear organic focus and an unmistakably green personality that sets it apart from its siblings.
That identity extends to the packaging. The bottle arrives in a deep olive-green glass — a direct visual nod to the landscape and the character of the oil inside.
The design was created in collaboration with Estudio Narita, a Málaga-based creative studio, bringing a local creative voice into every detail of the presentation.
Málaga: A Name Rising in Premium Olive Oil
For those who follow the world of extra virgin olive oil, Málaga is no longer a hidden secret.
Producers from this Andalusian province are increasingly appearing in the top rankings of international competitions, earning recognition for oils that combine strong varietal character with the distinct influence of high-altitude, Mediterranean terroir.
555 Ecológico is part of that story. It is made in a province that is finding its voice in the premium EVOO landscape — and at Terraverde, we are proud to contribute to it, one campaign at a time.
How to Use 555 Ecológico in the Kitchen
Its balance and green intensity make 555 Ecológico a naturally versatile oil. Use it raw to dress salads, white fish, grilled vegetables, or mild cheeses.
It works beautifully drizzled over hummus, burrata, or freshly sliced tomatoes. Its vegetal freshness also pairs well with legume dishes and grain-based bowls where you want the oil to be an active presence — not just a finish.
For those who appreciate the ritual of tasting EVOO on its own, this is an oil worth trying with a warm piece of sourdough or simply on the back of a spoon. Its aromatic clarity rewards attention.
Frequently Asked Questions
Three things set it apart: its certified organic production, its single high-altitude estate in Málaga, and its early green harvest. Together, these factors produce an oil with exceptional aromatic intensity and a fresh, vibrant profile that is hard to replicate in conventional olive oils.
Hojiblanca is one of the most widely grown olive varieties in Andalusia, but high-quality organic expressions from elevated estates — harvested early and cold-pressed for maximum freshness — are far less common. 555 Ecológico represents a careful, small-scale approach to the variety.
The estate is small, the farming practices are labour-intensive, and the harvest window is narrow.
Only 2,000 bottles were produced this campaign. Once they are gone, that is it until next year’s harvest.
555 Ecológico is available exclusively at stefanandsons.com Given the limited production, we recommend not waiting.
Keep it away from direct sunlight and heat sources. The dark olive-green glass helps protect the oil, but a cool, dark cupboard is ideal.
Consume within 12–18 months of harvest for the best flavour experience.
