Origin & Artisanal Production
The grapes are hand-harvested from our vineyard, planted in 2017 to complete our tribute to the Mediterranean Triad: olives, cereals, and vines.

It’s made exclusively from Cabernet Sauvignon grapes, offering red fruit notes and a brighter acidity compared to aged Modena balsamics.
Is it suitable for desserts or sweet applications?
Yes! Its natural sweetness and fruity aroma make it ideal for fruit glazes, roasted figs, or even gourmet ice cream toppings.
Can it be used in cocktails?
Absolutely. It adds a complex, tart-sweet profile to cocktails, spritzes, or mocktails, especially those using berries or citrus.
Is this vinegar aged?
While not barrel-aged like traditional balsamic, it’s carefully crafted by artisanal winemakers with controlled acidification in Jerez for nuanced flavor.
Is the white bottle functional or just decorative?
Both. It protects the vinegar from light damage, preserving aroma and flavor, while standing out elegantly on any kitchen shelf.
