La Chinata Primum is an extraordinary Extra Virgin Olive Oil crafted from a meticulous selection of hand-picked olives harvested during the very first days of the season, when the fruit is at its peak freshness and aromatic intensity.
Each olive is carefully selected by hand, one by one, a process typically reserved for table olives and rarely used in olive oil production.
Within 24 hours of harvesting, the olives are cold-extracted and naturally decanted using traditional methods, preserving their remarkable freshness, purity, and nutritional properties.
The result is an exceptional unfiltered EVOO that embodies the essence of the first harvest.
Harvested exclusively during the first ten days of October, Primum contains approximately 30% more polyphenols than standard premium extra virgin olive oils and boasts an exceptionally low acidity level of less than 0.15%, a hallmark of outstanding quality.
Its vibrant emerald-green color reflects the freshness of the early harvest, while the palate reveals a beautifully balanced profile with intense fruity aromas of green apple and banana, a silky texture, subtle peppery notes, and virtually no bitterness.
